One of our farm’s favorite things to grow is garlic, and these fresh Garlic Scapes are all of our dreams come true! 
Garlic Scapes are incredibly delicious, having a mild garlic flavor and texture much like a scallion, and are a truly seasonal bit of produce, making them especially coveted in the kitchen when it is scape season!
A Garlic Scape is the curly, green stalk that emerges from hardneck garlic plants before the actual garlic bulbs form. It is essentially the plant's flower stem, which, if left to develop, would produce a flower and seeds. However, it's common practice to remove the scape before it blooms, as this encourages the plant to direct its energy towards producing a larger, more mature garlic bulb.
